Mini Sweet And Savory Brunch Scones
Yields: 16 scones
These scones are a great addition to any brunch table. They can be paired with salted butter and jam, or our preferred way is served with crème fraîche and Royal White Sturgeon.

INGREDIENTS
2 cups all-purpose flour
1/2 cup granulated sugar
2 tsp salt
1/2 tsp baking powder
1/2 cup unsalted butter, frozen
1/2 cup heavy cream or buttermilk (plus 2 tbsp for brushing)
1 large egg
1 and 1/2 tsp pure vanilla extract

Crème fraîche
INSTRUCTIONS
1. Whisk the flour, sugar, salt, and baking powder together in a large bowl. Grate the frozen butter using a cheese grater, then add it to the flour mixture. Combine with a pastry cutter or your hands until the mixture comes together. Place in the fridge while preparing the wet ingredients.
2. Whisk 1/2 cup heavy cream, the egg, and vanilla extract together in a small bowl. Drizzle over the flour mixture, then gently mix with your hands until everything appears moistened.
3. Continue mixing the dough in the bowl until it comes together. Form the dough into 2 balls, then flatten each into an even circle about 1 inch thick. Slice into triangles. Freeze until ready to bake. If baking immediately, chill in the freezer for at least 30 minutes before baking.
4. When ready to bake, preheat the oven to 400°F (204°C).
5. Line two baking sheets with parchment paper or silicone baking mats. After chilling, arrange the scones 2–3 inches apart on the prepared baking sheets.
6. Bake for 15–20 minutes, or until golden brown around the edges and lightly browned on top. Remove from the oven and let cool for a few minutes.
7. Top with crème fraîche and a dollop of Royal White Sturgeon, and enjoy!
